Domaine Plageoles Gaillac Mauzac Nature Sparkling 2020

Domaine Plageoles Gaillac Mauzac Nature Sparkling is a méthode ancestrale sparkling wine from a forty-year-old parcel of the rare Mauzac Rose.

Gaillac in the South West has been making sparkling wine by the ancestral method since the 1500s, long before Champagne turned to bubbles, and Méthode Gaillacoise was once a common synonym for the technique. The Plageoles family are the custodians of the region's near-lost grape varieties, and this wine comes from organically farmed Mauzac Rose, an exceptionally rare mutation of the local white grape. The method is simple: the naturally fermenting base wine is chilled to arrest fermentation while twenty-five to thirty grams per litre of residual sugar remain. The following spring it goes into bottle, where fermentation resumes under cork and produces the bubbles. Nothing else is added and no dosage is needed, since the bottle fermentation stops naturally with a trace of sugar left. There is no disgorgement, so a slight cloudiness in the bottle is expected.

Drink now and within the next two to three years. Serve at 8°C with a fruit tart, soft cheese or a plate of charcuterie.
