Domaine Ponsot Clos des Monts Luisants Vieilles Vignes Blanc, here in magnum, is the only premier cru in Burgundy made entirely from Aligoté.
Morey-Saint-Denis is a red-wine village, and for a long time this was its only premier cru white; Dujac now makes a white Monts Luisants too, but not from the Clos, which is a Ponsot monopole high on the slope. Small quantities of Chardonnay and Pinot Gouges, a white mutation of Pinot Noir, appeared in the blend at various points in the vineyard's history, but from 2004 the wine returned to its origins as pure Aligoté, mostly from a selection of vines planted in 1911. Since 2015 a parcel of younger fruit has made up around 15 per cent of the blend, bringing the average vine age down to roughly 90 years. The grapes are pressed in the domaine's vertical press, fermented in both tank and barrel, and aged in wholly neutral barriques between 10 and 60 years old.
A wine to cellar, and the magnum will slow it further: five years minimum, with decades ahead. Serve at 10-12°C with poultry in cream sauce, grilled crayfish or a mature comté.
