Description
Le Pied de Baud comes from a single hectare on the wooded northern edge of Châteauneuf-du-Pape, led by Grenache with Mourvèdre and Cinsault alongside.
That plot lies at the rim of the Brusquières plateau, ringed by trees that keep it a degree or two cooler, on a sandy clay matrix heavy in clay with rounded stones and limestone bedrock beneath. Vines average ninety years, the farming is Ecocert organic and Demeter biodynamic, and once sorted the bunches ferment in temperature-controlled steel before eighteen months split between 36-hectolitre Stockinger foudres and terracotta amphorae, with no fining or filtering.
Texture is the point here: dark plum and blackcurrant wrapped in pepper, bay and dried herb, with plenty of body and a long savoury close. Decant it, serve at 16-18°C, and match with beef daube, merguez off the grill or a pot of cassoulet.
