Domaine Santa Duc Châteauneuf-du-Pape Les Saintes Vierges 2022

Les Saintes Vierges takes its name from the single lieu-dit east of the village that supplies every bunch, Grenache joined by Mourvèdre and Counoise.

Seventy-year-old vines grow on coarse sand full of quartz and mica, threaded with shell fragments left behind by Miocene safres, across 1.2 hectares held to Ecocert organic and Demeter biodynamic standards. Bunches are picked by hand, sorted twice, fermented in temperature-controlled vats for three to four weeks, then given a year and a half in large oak foudres and terracotta amphorae ahead of an unfined, unfiltered bottling.

Floral lift is the signature — rose and dried lavender over raspberry and red plum — with sweet spice and fine-grained tannin carrying a full-bodied finish. Pour at 16-18°C after a short decant and serve with roast pork belly, pigeon or a tomato and olive tart.
