Schoffit Cremant d'Alsace is a traditional method Alsace sparkling wine held up to forty months on lees before disgorgement.
Domaine Schoffit is based in Colmar and is best known for the Clos Saint Theobald on the volcanic Rangen de Thann, the southernmost and steepest grand cru in Alsace, alongside vineyards on the deep alluvial soils of the Harth around the city. The estate has a long standing reputation for concentrated, low yielding whites. Its Cremant is built on Auxerrois, which makes up sixty percent of the blend, filled out with Pinot Blanc and Pinot Gris, and it is unusually ambitious for the appellation: rather than the nine month legal minimum the wine rests up to forty months on lees, with a very low dosage.
Dry and toasty with real depth, it suits roast chicken, creamy fish dishes and washed rind cheeses as much as it does an apertif; serve at around 9 degrees.
