Description
Schoffit Pinot Gris SGN Rangen Grand Cru is a Selection de Grains Nobles, made from botrytised berries picked on the volcanic slope at Thann.
Selection de Grains Nobles is the higher of the two late harvest categories in Alsace and demands a must weight above the Vendanges Tardives level, hand picking in successive passes through the vineyard and eighteen months before release. In practice it means noble rot: pickers take only berries shrivelled by botrytis, which concentrates sugar and acid alike, and yields fall to a fraction of a normal crop. Rangen de Thann, steep, volcanic and cooled by the Thur below it, gives the autumn humidity and slow ripening the process needs. Schoffit farms the Clos Saint Theobald there and is one of the few estates in Alsace to make these wines regularly. The wine carries 160 grams per litre of residual sugar.
Very sweet and concentrated yet lifted by acidity, it belongs with foie gras, Roquefort, or on its own in a small glass; serve at around 10 degrees.
