Description
Schoffit Pinot Gris Tradition is a dry Alsace Pinot Gris from the gravel soils of the Harth outside Colmar.
The Harth is a broad alluvial terrace on the plain south of Colmar, deep gravel and sand laid down by the Rhine and the Ill, in one of the driest pockets of France. Vines root deep for water and yields are naturally moderate, which suits Pinot Gris, a grape that turns heavy on richer ground. Domaine Schoffit built its reputation on this lieu-dit before adding its Rangen holding, and Tradition is the estate's everyday bottling from it. Fermentation is cool and in stainless steel, and the wine is taken almost to dryness, carrying 1.8 grams per litre of residual sugar, unusual for a variety that is often finished off dry.
Dry, savoury and textured rather than sweet, it suits roast pork, mushroom dishes, smoked fish and soft cheeses; serve at around 10 degrees.
