Description
Schoffit Riesling Tradition is a dry Alsace Riesling grown on the gravel of the Harth, the warm alluvial terrace south of Colmar.
Colmar sits in the rain shadow of the Vosges and is one of the driest towns in France; the Harth, a lieu-dit of deep gravel and sand on the plain below the city, is drier still, and the free draining stones push the vines to root deep. Domaine Schoffit farmed here long before it added its holding on the Rangen, and Tradition is the house style Riesling drawn from these plain vineyards rather than the slopes. Pressing is gentle, fermentation is slow and cool in stainless steel and the wine is kept from malolactic fermentation so the acid line stays intact. It carries 4.3 grams per litre of residual sugar, which is effectively dry.
Taut and dry with a citrus edge, it suits trout, oysters, choucroute and simply cooked white fish; serve chilled at around 9 degrees.
