Domaine Séguinot-Bordet Chablis 1er Cru 'Fourchaume' is a classified single-vineyard Chardonnay from one of Chablis's most historic family estates.
The Bordet family has farmed vines around Maligny, just north of the town of Chablis, since at least 1590, and the domaine is now run by Jean-François Bordet under High Environmental Value certification, with no chemical treatments used in the vineyard. Fourchaume is one of Chablis's largest and best-regarded Premier Cru climats, its steep, east-facing Kimmeridgian limestone slopes giving structure and finesse to the wines grown there; the estate holds parcels within L'Homme Mort, part of the Fourchaume cru. In the cellar the wine is raised with minimal oak influence, resting in horizontal stainless-steel tanks to maximise contact with the lees and sharpen its mineral character.
A refined, terroir-driven white, it suits oysters, richer fish dishes and other occasions that call for a serious cru Chablis.
