Domaine Sigalas Aa Assyrtiko and Athiri Santorini 2024

Domaine Sigalas Aa blends Assyrtiko with Athiri, both native to the Aegean islands.

Athiri is softer and more floral than Assyrtiko, and blending the two gives a wine with less of the piercing acidity that makes pure Santorini Assyrtiko so austere in youth. Both are grown in volcanic ash on vines trained into low baskets against the wind. Paris Sigalas was a mathematician before he turned to wine in the 1990s.

Serve at 11 degrees with grilled fish, seafood or a Greek salad. Drink within five years.
