Herb-Roasted Chicken with Cherry Reduction
Ingredients:
- 4 chicken thighs (skin-on, bone-in)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1 cup fresh or frozen cherries, pitted
- 1/2 cup light red wine (preferably a light Burgundy Pinot Noir)
- 1 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- 1 tbsp honey (optional, for added sweetness)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C.
- Season the chicken thighs generously with salt and pepper. In an ovenproof skillet, heat the olive oil over medium-high heat and sear the chicken thighs, skin-side down, for 5–6 minutes until the skin is golden and crisp. Flip and sear the other side for 3 minutes. Remove the chicken and set aside.
- In the same skillet, add the chopped shallot and garlic. Sauté until softened, about 2 minutes.
- Add the cherries, red wine, thyme, and rosemary. Allow the mixture to simmer for 5–7 minutes until the cherries soften and the sauce reduces slightly. Stir in the honey if using, and adjust seasoning with salt and pepper.
- Return the chicken to the skillet, spooning some of the cherry reduction over the top. Transfer the skillet to the preheated oven and roast for an additional 10 minutes to meld the flavors.
- Remove from the oven, garnish with freshly chopped parsley, and serve immediately.
