Domaine Vincent Dancer Chassagne-Montrachet is a village white from two parcels, one directly below the domaine's cellars and the other on the Puligny border.
Chassagne-Montrachet shares the hill of Montrachet with Puligny and produces white wine of real substance from its band of limestone and marl. Vincent Dancer, who established the domaine in 1996 from family holdings and now works alongside his son Théo, farms a small collection of parcels across Chassagne, Meursault, Pommard and Beaune, with low yields and a deliberately restrained hand in the cellar. This bottling comes from Les Voillenots Dessus, planted in 1999 just below the cellars in a well-sited part of the village land, and from La Bergerie, a slightly younger planting on the same line, right against the boundary with Puligny-Montrachet. The fruit is whole-bunch pressed and fermented with natural yeasts, then raised largely in older barrels, giving a racy, floral and finely drawn style rather than a broad one.
Drink from release across the next six to eight years. Serve at 10-12°C with grilled snapper, chicken in cream sauce or a gruyère soufflé.
