Domaine Vincent Dancer Grand Cru Chevalier-Montrachet 2020

This is the domaine's rarest white, from vines planted in 1951 in the Grand Cru directly above Le Montrachet.

Chevalier-Montrachet occupies the upper slope in Puligny-Montrachet, above Le Montrachet itself, on thin clay and pebbles over hard limestone. The altitude and the poverty of the ground give a Chardonnay built on tension and length rather than breadth, and it is counted among the most refined of all the white Grands Crus. Vincent Dancer, an engineer by training, took over family parcels in 1996 at twenty-two and built his cellar the year after; the domaine runs to around six hectares across Chassagne, Puligny, Meursault, Pommard and Beaune, and his son Théo now handles the day-to-day. He was the first grower in Chassagne to certify organic, in 2012, having farmed that way since 2006, and works the premier cru rows with a horse. The Chevalier ferments naturally, spends about twelve months in used barrel and is then racked into stainless tank for a further seven or eight months before bottling, without fining or filtration.

Best given five years and capable of far longer. Serve at 10-12°C with lobster, turbot or roast chicken with truffle.
