Description
Vincent Dancer farms a tenth of a hectare of Chevalier-Montrachet planted in 1952, in the top corner of the Grand Cru.
Chevalier-Montrachet lies directly above Le Montrachet on the Puligny slope, on thin soils over hard limestone that give a Chardonnay of tension and mineral drive rather than opulence. The Dancer parcel sits in the top left-hand corner of the vineyard, on the same elevation as part of Le Montrachet itself. It is worked by horse, the vines trained on posts and spur pruned, and yields are tiny: the domaine makes only one or two barriques in a year. New oak has been dropped from the élevage of this cuvée altogether, so that the fruit power and mineral character of the site carry the wine unadorned. Production is small enough that only a handful of bottles reach Australia each year.
It can be broached young but deserves five to ten years and will hold far longer. Serve at 10-12°C with turbot, lobster or poached chicken.
