Description
Domaine William Fèvre Chablis is the estate's village wine from the northernmost vineyards of Burgundy, where Chardonnay is grown for clarity rather than weight.
The Chablis appellation spreads across twenty communes along the Serein valley, on Kimmeridgian marl and, on the higher plateau, harder Portlandian limestone. It is a cold place to grow vines, prone to spring frost, and the wines are shaped as much by that as by the grape itself. William Fèvre founded the domaine in 1959 and it has belonged to the Henriot family since 1998, with Didier Séguier in charge of the cellar. The village wine is picked from the estate's own parcels, pressed gently and raised largely in stainless steel, so that little stands between the fruit and the ground it came from.
A format that suits a longer table and ages a little more slowly; serve at 10 to 12 degrees with oysters, cured fish or a plain roast chicken.
