Domaine William Fèvre Chablis Champs Royaux 2024

Domaine William Fèvre Chablis Champs Royaux is the estate's village Chablis, and one of the most widely trusted benchmarks for the appellation.

Chablis is the northern outpost of Burgundy, nearer to Champagne than to Beaune, and its Chardonnay grows on Kimmeridgian marl full of fossilised oyster shells. That combination of a cool climate and calcareous soil is what gives Chablis its particular cut, and the village level wine is where the region's signature is at its most direct. The domaine was founded in 1959 by William Fèvre, whose family had long farmed vines here, and was bought in 1998 by the Henriot family, who installed Didier Séguier as winemaker. Champs Royaux draws on parcels spread across the appellation and is raised without new oak, in stainless steel, which keeps the emphasis on the fruit and the site rather than the cellar.

Serve well chilled, at about 10 to 11 degrees, with oysters, prawns, sushi or goat's cheese.
