Domaine William Fèvre Chablis Grand Cru Les Clos Domaine comes from the vineyard most often named as the greatest in Chablis.

Les Clos is the largest of the seven grand crus, occupying the central and steepest stretch of the hillside above the town, with thin soils over hard Kimmeridgian limestone and a south-west aspect that catches the afternoon sun. Its wines are the slowest of all Chablis to open and the longest lived. The domaine was founded in 1959 by William Fèvre, whose family had long farmed vines here, and was bought in 1998 by the Henriot family, who installed Didier Séguier as winemaker. The estate holds the largest area of grand cru vineyard in Chablis, and Séguier's move away from heavy new oak was made precisely so that sites like this could speak for themselves.

Serve at about 12 degrees with lobster, turbot or roast chicken; this is a wine to keep, and it will improve for fifteen years or more.
