Description
Domaine William Fèvre Chablis Grand Cru Valmur Domaine comes from a fold in the Grand Cru slope at Chablis, a site with two facing hillsides that ripen at their own pace.
Chablis sits at the northern edge of Burgundy, closer to Champagne than to the Côte d'Or, and its Chardonnay grows on Kimmeridgian marl formed in a shallow sea, soil still littered with small fossilised oyster shells. The seven Grand Cru climats share a single south-west facing slope on the right bank of the Serein, with Valmur in the middle of them, between Vaudésir and Les Clos. William Fèvre founded the domaine in 1959 and built up the largest Grand Cru holding in the appellation; the Henriot family bought it in 1998 and Didier Séguier has directed the winemaking since, working with hand-picked estate fruit and no new oak.
Serve at about 12 degrees with roast chicken, scallops or a mature hard cheese; Grand Cru Chablis of this order repays a decade or more in the cellar.
