Domaine William Fèvre Chablis Grand Cru Vaudésir Domaine is grown in a narrow amphitheatre of vines on the Grand Cru hill at Chablis, one of the most sheltered corners of the appellation.

The seven Grand Cru climats of Chablis occupy one south-west facing slope above the right bank of the Serein, on Kimmeridgian marl laid down in a shallow sea and still full of small fossilised oysters. Vaudésir is the most curved of them, a valley whose sides face one another so that the vines are picked at different moments; the celebrated La Moutonne lies almost entirely within it. William Fèvre created the domaine in 1959 and gathered the largest Grand Cru holding in Chablis, and since the Henriot family took over in 1998 Didier Séguier has made the wines, with hand harvesting and ageing in older barrels rather than new oak.

It is worth decanting and serving at around 12 degrees, with turbot, lobster or poultry in a cream sauce, and it will hold in the cellar for ten years or more.
