Description
Domaine William Fèvre Chablis Premier Cru Beauroy Domaine comes from the western edge of the appellation, one of the more distant and airy of the Chablis Premiers Crus.
Beauroy lies on the left bank of the Serein, out towards the villages of Poinchy and Beines, on the same Kimmeridgian marl that runs beneath the whole appellation, its fossil oyster shells a reminder of the sea that once covered this part of Burgundy. Sitting further from the river and higher up, it ripens in its own time. William Fèvre established the domaine in 1959, assembling holdings across the best slopes of Chablis; the Henriot family has owned it since 1998 and Didier Séguier makes the wines, hand-harvesting the estate parcels and using older barrels and steel in place of new oak.
Serve at 11 to 12 degrees alongside grilled fish, chicken or a goat's cheese from the Loire; it drinks well young and will keep for five to eight years.
