Description
Domaine William Fèvre Chablis Premier Cru Fourchaume is drawn from the long right bank slope that runs north from the Grand Crus of Chablis.
Fourchaume is the largest of the Chablis Premiers Crus, stretching through La Chapelle-Vaupelteigne, Maligny and Fontenay-près-Chablis, and it gathers several named climats under its title, Vaulorent and L'Homme Mort among them. It shares the exposure of the Grand Cru hill just to its south, facing south-west over the Serein on the same Kimmeridgian marl, a fossil-strewn seabed laid down when this corner of Burgundy lay under a shallow sea. William Fèvre founded the domaine in 1959 and built the largest Grand Cru holding in the appellation, and since the Henriot family acquired it in 1998 Didier Séguier has run the cellar, picking by hand and avoiding new oak so that the site speaks plainly.
Serve at around 11 degrees with white fish, veal or a soft cheese, and give it two or three years in bottle if you can spare them.
