Domaine William Fèvre Chablis Premier Cru Les Lys Domaine 2023

Domaine William Fèvre Chablis Premier Cru Les Lys Domaine comes from one of the coolest and gentlest slopes on the left bank at Chablis.

Les Lys is a climat within the broad Vaillons group on the left bank of the Serein, and it faces further round to the north-east than its neighbours. The slope is easier, the sun weaker and the grapes are usually picked later, which gives a wine of finer build than the more southerly Premiers Crus. The soil is the familiar Kimmeridgian marl, full of the small fossil oysters that mark this old seabed, and the whole appellation lies further north than any other part of Burgundy. William Fèvre founded the domaine in 1959 and it has belonged to the Henriot family since 1998; Didier Séguier makes the wines from hand-picked estate fruit, with no new oak in the cellar.

Serve it cool but not cold, at around 11 degrees, with oysters, crab or simply dressed white fish.
