Description
Domaine William Fèvre Chablis Premier Cru Montmains Domaine comes from a long, narrow valley on the left bank at Chablis, planted on some of the appellation's leaner soils.
Montmains runs south-west from the town along a side valley, taking in the climats of Butteaux and Les Forêts, and its stony Kimmeridgian marl lies thin over the rock. Left bank Chablis of this kind tends to be taut and slower to open than the wines from the opposite slope. William Fèvre created the domaine in 1959 and gathered parcels across the best of Chablis, including a substantial share of the Grand Crus; the Henriot family took ownership in 1998, and Didier Séguier has since made the wines with hand harvesting, gentle whole-bunch pressing and no new oak.
Serve at about 11 degrees with shellfish, poultry or a plate of charcuterie; which is useful for a single serving.
