Domaine William Fèvre Chablis Premier Cru Vaillons Domaine comes from the broadest sweep of Premier Cru vineyard on the left bank of the Serein.

Vaillons is less a single vineyard than a family of climats, Châtains, Séché, Beugnons and Les Lys among them, running along the slope opposite the Grand Cru hill. Facing back towards the morning sun on the same Kimmeridgian marl, the fossil-filled seabed that underpins the whole appellation, it gives wines that are generally firmer and slower to unfold than those from the right bank. Vaillons is the largest expanse of Premier Cru on this side of the river. William Fèvre founded the domaine in 1959 and it has been owned by the Henriot family since 1998, with Didier Séguier making the wines from hand-picked estate parcels, pressed gently and raised without new oak.

Serve at 11 to 12 degrees with oysters, grilled prawns or roast chicken.
