Description
Domaine William Fèvre Chablis Premier Cru Vaulorent comes from a strip of vineyard that runs straight into the Grand Cru hill at Chablis.
Vaulorent sits at the southern end of Fourchaume on the right bank of the Serein, directly against Preuses, and its slope and Kimmeridgian marl are continuous with the Grand Cru land beside it; growers have long argued that it deserves the higher title. Chablis lies at the northern limit of Burgundy, closer to Champagne than to the Côte d'Or, and cold springs and frost are part of the bargain here. William Fèvre founded the domaine in 1959 and put together the largest Grand Cru holding in the appellation. Since the Henriot family took over in 1998, Didier Séguier has made the wines, harvesting by hand, pressing whole bunches gently and ageing in a mixture of steel and older barrels.
A format that slows its development and suits a table of six; serve at around 12 degrees with turbot, scallops or roast poultry.
