Domaine William Fèvre Chablis Premier Cru Vaulorent Domaine comes from the parcel of Fourchaume that presses up against the Grand Cru of Preuses.
Vaulorent lies on the right bank of the Serein at the northern end of the Grand Cru hillside, sharing its south-west exposure and its Kimmeridgian marl, a seabed of fossilised oyster shells laid down long before there were vines here. Many hold that it is Premier Cru only by an accident of boundary drawing. Vaulorent belongs administratively to Fourchaume, the largest of the Chablis Premiers Crus, but it is always bottled under its own name. William Fèvre established the domaine in 1959 and assembled the largest Grand Cru holding in Chablis; the Henriot family has owned it since 1998 and Didier Séguier makes the wines, with hand picking, gentle pressing and ageing in older barrels and steel.
Serve at about 12 degrees with lobster, turbot or a farmhouse chicken, and expect it to gain from five to ten years in the cellar.
