Domaine Xavier Monnot Beaune Les Toussaints Rouge is a Pinot Noir from a named site on the slope above the town of Beaune.
Les Toussaints sits in the northern part of the Beaune vineyard, close neighbours with Grèves and Cent Vignes on ground that drains freely and warms early. Beaune itself is the commercial capital of Burgundy and holds the largest area of Premier Cru vineyard on the Côte d'Or, much of it historically in the hands of the town's négociant houses rather than growers. Xavier Monnot works from Meursault, a few kilometres south, and farms parcels across the Côte de Beaune in both colours. The reds are made in the traditional way, fermented in the winery's open vats and raised in oak barrels, with the proportion of new wood judged against the weight of the site.
Serve at around 16 degrees with game birds, roast lamb, or mushroom and lentil dishes; a few years in the cellar will not go amiss.
