Domaine Xavier Monnot Meursault Les Chevalières is a village level white Burgundy from a named lieu-dit on the higher ground of Meursault.
Les Chevalières sits above the village, on the northern side towards Auxey-Duresses, where the slope is steeper, the soils thinner and the fruit ripens a little later than in the Premier Cru band further south. Wines from this part of the commune tend to be tighter and more mineral in build than the broader style Meursault is usually credited with. Meursault has no Grand Cru of its own, and its named village lieu-dits have long been where knowledgeable buyers look for value. Xavier Monnot works from Meursault and follows the village's classical method, whole bunch pressing, barrel fermentation and extended ageing on lees, with new oak used with restraint.
Serve at around 12 degrees with grilled fish, roast poultry or shellfish, and give it two or three years in bottle if possible.
