Dominus 2016

Dominus is the Yountville estate of the Moueix family, and 2016 is a restrained, tightly structured vintage with a long life ahead.

Known as Napanook, the vineyard has one of the longest histories in the Napa Valley and was brought back to prominence when Christian Moueix took it on in the early 1980s. Today it is farmed with close attention and picked by hand. Cabernet Sauvignon dominates, with Cabernet Franc adding perfume and Petit Verdot bringing colour and spice, and the wine is matured in French oak. In the balanced 2016 season the estate made a compact, reserved wine of deep forest berries, juniper and truffle, with fine tannins and hints of lavender and dark chocolate waiting to unfold.

Still reserved, this will reward another decade in the cellar. When you do open it, decant for two hours and serve at 16 to 18 degrees with prime rib, braised lamb or wild mushroom pappardelle.
