Dominus 2021

Dominus is the flagship wine of Christian Moueix's Yountville estate, and the 2021 is dense, voluptuous and profound.

Few Napa wineries have been shaped so clearly by Bordeaux. The Moueix family, custodians of some of the great Pomerol and Saint-Émilion names, have made wine here since the first Dominus vintage of 1983. The Napanook vineyard itself has a long history, with vines first planted there in the nineteenth century. For 2021 the blend is Cabernet Sauvignon with Cabernet Franc. A drought year kept the crop small and the berries concentrated, giving a wine of evergreen forest floor, incense and rich plum, with profound depth and an extremely long finish.

Give this young wine time, or a long decant of two to three hours, and serve at 17 to 18 degrees. Try it with char-grilled beef, venison with juniper or a hard sheep's milk cheese.
