Dominus 375ml 2016

Dominus 375ml is the half-bottle format of one of Napa Valley's great estate wines, and 2016 is a restrained, compact and long-lived vintage.

The vineyard occupies bench land in Yountville near the Mayacamas foothills, where gravel soils give wines of structure and restraint. The Moueix family bring their Right Bank experience to the site, favouring precision in the vineyard and a light touch in the cellar. The 2016 blend is Cabernet Sauvignon with Cabernet Franc and Petit Verdot. A balanced, even season produced a tightly woven wine of deep forest berries, juniper and truffle, with fine tannins, earth, lavender and dark chocolate set to emerge over time.

Because smaller bottles develop sooner, this is starting to open up, though it has plenty in reserve. Decant for up to an hour, serve at 17 degrees and pair with duck breast, beef tenderloin or a plate of aged cheeses.
