Dormilona Blanco 2026

Dormilona Blanco is a dry Margaret River white made entirely from Semillon.

Semillon in Margaret River can go two ways, grassy and lean or textural and broad, and this one takes the second path without adding weight. Fruit comes off a north-facing block of gravelly loam at Wilyabrup, the strip in the middle of the region with the best claim to serious white wine. It was hand picked in the cool of the morning and pressed as whole bunches straight to barrel, which keeps the phenolics low. A month on full lees followed, then a rack to tank and bottling. Minimal handling is the house method, and it shows in how direct the wine tastes.

Lemon, green melon and a touch of lanolin, dry and clean with a lightly chalky finish. Drink it cold, 8 to 10 degrees. It goes with oysters, grilled whiting, a green salad with plenty of herbs, or a bowl of chips.
