Dormilona Cabernet Sauvignon 2022

Dormilona Cabernet Sauvignon is a Margaret River Cabernet made with minimal intervention.

Yungarra Estate sits on the ridge between Dunsborough and Yallingup, and the Cabernet grown there is handled about as simply as Cabernet can be. Fruit was picked by hand and foot-stomped during a wild fermentation that ran three months on skins, far longer than a conventional red ferment, which builds tannin slowly instead of extracting it hard. It was then basket-pressed into a mix of seasoned barriques, demi-muids and amphora, then racked once and bottled with barely any sulphur. Nothing was added along the way. Margaret River Cabernet with this little winemaking on it is rare.

Blackcurrant and bay, with an iron-and-graphite savouriness and a long, dry tannin finish that has softened with a few years in bottle. Serve at 17 degrees, decanted. Roast lamb, grilled sirloin, or a slow braise with plenty of dark stock.
