Dormilona Cabernet Sauvignon 2025

Dormilona Cabernet Sauvignon is a dry-grown, organic Margaret River Cabernet from Yallingup.

Dry-growing Cabernet on a north-facing hillside of gravel over limestone is the reason this block gives the concentration and structure it does, and the organic farming keeps the vines in balance without irrigation to fall back on. The hand-picked fruit was foot-stomped, then wild fermented in open vessels and held six weeks on skins to build depth and detail. Basket pressing sent it to seasoned French barriques, where it was left alone: racked once, sulphured only at bottling, with no additives, no fining and no filtration. What lands in the glass is the vineyard with very little between.

Savoury and textural, with mulberry and cassis, a dusting of dried herb, and structure that feels confident without being heavy. Serve at 16 to 18 degrees after a decant. It suits lamb on the bone, aged beef, a mushroom and lentil pie, or hard cheese.
