Description
Dormilona Chenin Blanc is a dry white from Yallingup, at the northern end of Margaret River in Western Australia, made from Chenin Blanc.
The fruit is grown at Yungarra Estate on the Yallingup hillside, where the rows face north over a gravelly base above limestone. The vines are trained to a lyre system, which splits the canopy into two walls and lets filtered light reach the bunches rather than full sun.
Chenin Blanc off the cooler coastal parts of Margaret River generally runs dry and firm, with orchard and citrus fruit behind the acidity, and it is a flexible table white. Serve at around 8 to 10 degrees with oysters, roast chicken or pork with apple.
