Dormilona Cherub Pet Nat 2025

Dormilona Cherub Pet Nat is a bottle-fermented sparkling Chenin Blanc from Margaret River.

Chenin from the Yungarra vineyard makes this one, from a cool harvest that brought even ripening and clean fruit, both useful when a wine is going to be finished in bottle with nothing to hide behind. Bunches were hand harvested and pressed whole direct to barrel, then left on lees until spring. In spring the wine was racked to tank, chilled, and dosed with frozen juice to set up the second fermentation in bottle. It is a more precise pét-nat than most, which tend to trade detail for exuberance.

Fine bubbles, bright apple and citrus, a little bready complexity from the lees, and a composed, dry finish. Serve it very cold, 6 to 8 degrees, and open it over the sink. Oysters, fried chicken, salt-and-pepper squid, or a bowl of nuts before dinner.
