Description
Dormilona Clayface Cabernet Sauvignon is a Margaret River Cabernet fermented and raised in amphora.
Everything in the Clayface range happens in clay, and this Cabernet spends its whole life in one pot. Fruit came from the Yungarra site, where gravelly, loamy, limestone-rich soils and well-established vines have settled into a rhythm under Jo and Jim's management. It was hand harvested, destemmed into amphora, and plunged by hand until the cap dropped. Four months later it was basket-pressed straight back into the same vessel, rested another month, and was then bottled by hand directly from the pot. Clay adds texture without adding flavour, which is why Cabernet grown this well can stand it.
The fruit reads darker and more mineral than an oaked Cabernet, with blackcurrant, wet stone and a little dried thyme, and tannin that is chalky and fine. Serve at 16 to 17 degrees. Lamb chops, grilled eggplant with yoghurt, or a plate of aged cheddar.
