Description
Dormilona Clayface Chardonnay is a Margaret River Chardonnay made entirely in amphora.
When Jo Perry started working with amphora over a decade ago it was a novelty in Western Australia, and the purity it gives still sets these wines apart. The fruit is grown organically on gravelly loam with plenty of limestone, close enough to the ocean for the breeze to matter. Bunches are hand harvested and pressed whole straight into clay, where primary and secondary fermentation both happen, and the wine is then racked directly to bottle. No oak touches it. In a region famous for fuller, barrel-worked Chardonnay, this is a deliberate step in the other direction.
Clay gives a subtle grain to the texture while the fruit stays front and centre: grapefruit, white peach, a mineral hum, a long dry finish. Serve at 11 degrees. It is good with sashimi, grilled prawns, roast chicken, or a simple omelette.
