Dormilona Magic Carpet Pet Nat 2026

Dormilona Magic Carpet is a hand-bottled sparkling Chenin Blanc from the Swan Valley.

Pét-nat is the oldest way of making a sparkling wine and the least forgiving: the wine goes into bottle before its first fermentation has finished, and whatever happens next happens with no intervention. Chenin Blanc handles it better than most varieties because it keeps its acidity. This one is entirely Chenin from a sandy-clay site in the Swan Valley, hand harvested and whole-bunch pressed to tank for a wild ferment, chilled to arrest fermentation at the right sugar level, then bottled by hand to finish the job. Nothing is added and nothing is taken out.

Fresh and dry with a soft fizz, lemon, white pear and a bready edge from the lees left in the bottle. Serve it at 6 to 8 degrees and expect a little cloudiness. Fried food is the natural partner: tempura, arancini, hot chips with salt.
