Description
Dormilona Skinnie Sauvignon Blanc is a Margaret River white fermented on its skins in amphora.
The fruit is grown by Ben Gould at the certified organic Blind Corner vineyard in Quindalup, on the coastal flats, with the Indian Ocean sitting four kilometres north and eight west. Underneath sit sandy soils with pea gravel down to seven or ten metres, then porous coffee rock and ironstone at about twenty-five. Sea air and that free-draining profile keep the variety from turning tropical. Fruit was hand harvested, destemmed into amphora, and fermented and rested there on skins for five months before being basket pressed to tank and bottled after a short settle.
Five months on skins turns Sauvignon Blanc into something else: grapefruit pith, dried herbs, nettle and a savoury, mouth-gripping finish. Serve at 12 degrees in a wine glass. It suits grilled asparagus, goat cheese, a chicken and tarragon salad, or oily fish.
