Dormilona Tempranillo 2023

Dormilona Tempranillo is a medium-bodied Margaret River Tempranillo from an organic vineyard.

Jo Perry and Jim, her viticulturist partner, signed a twenty-year lease at Yungarra Estate in 2021, midway between Dunsborough and Yallingup, with some of the best views in the region. The soils are healthy gravelly loams and the site picks up cooling breezes off the ocean from the south and west, which slows ripening. Jim manages the farming, certified organic and closely watched, so that fruit arrives at the cellar in a condition that lets Jo do almost nothing to it. This Tempranillo was picked by hand and fermented as a mix of destemmed fruit and whole bunches, plunged daily over fourteen days, then pressed to oak.

Sour cherry, cured meat and a dusting of Spanish paprika, with fine tannin and enough acidity to keep it lively. Serve at 15 to 16 degrees. Natural with jamón and Manchego, and also good with grilled lamb, a paella, or slow-cooked pork.
