Description
Dr. Bürklin-Wolf Böhlig Riesling is a Wachenheim Erste Lage, classified P.C. under the estate's Burgundian-style hierarchy.
Böhlig lies on the Wachenheim slope on sandy loam over weathered sandstone, with an admixture of basalt that the estate credits for the site's smoky, savoury cast. It is one of the cooler and later-ripening of Dr. Bürklin-Wolf's Wachenheim parcels, which tends to give a more linear, tightly wound wine than the neighbouring Gerümpel. The domaine has been fully biodynamic and Demeter certified since the early 2000s. Fruit is picked by hand in successive passes, whole-bunch pressed, and fermented with indigenous yeasts in large neutral oak casks, then held on fine lees over the winter before a dry bottling.
Taut and mineral, and it needs a few years to open out; serve at 11 to 12 degrees with white fish, shellfish, or roast veal.
