Description
Dr. Bürklin-Wolf Forst Riesling is a dry village Riesling assembled from declassified grand cru parcels in Forst.
Forst is the most highly regarded village of the Mittelhaardt, and its distinguishing feature is basalt, dark volcanic rock quarried above the village and historically spread across the sandstone and loam vineyards, where it warms the soil and holds moisture. This village Riesling is assembled from fruit declassified out of Dr. Bürklin-Wolf's Forst grand cru holdings, among them Kirchenstück, Jesuitengarten, Pechstein and Ungeheuer, together with younger vines. The estate converted to biodynamics in the early 2000s and holds Demeter certification. Grapes are picked by hand and whole-bunch pressed, fermentation runs on ambient yeasts in steel and large neutral casks, and the wine ages on its fine lees before being bottled dry with a screwcap closure.
Dry, taut and mineral, with a little bottle age already working in its favour; serve at 10 to 12 degrees with grilled fish, roast veal, or hard cheese.
