Eight vintages on from the first pick, the family reckon each year teaches them a bit more about timing at this Maraekakaho site. Whole bunches are pressed straight into a stone egg, which is also where fermentation gets going. Eleven months follow in cast stone eggs and older barrels before the wine is bottled unfined at the winery.

Honeysuckle and lemon pith open it up, with green apple, a flinty edge and a waxy texture running through to a saline finish. Serve it cold but not icy, about 10-12C. Try it with oysters, roast pork belly or a sharp cheddar.
