Eldridge Chardonnay 2023

Eldridge Chardonnay is a Mornington Peninsula Chardonnay from a single estate site.

Cool-climate Peninsula fruit brings naturally high acidity, and that is the starting point for this wine: flavour and length come with it, but the acid is what the winemaking has to work around. All parcels were hand picked, pressed as whole bunches and wild fermented on full solids in puncheons, a quarter of them new. A complete malolactic conversion softens that acid line, and ten months on lees fills out the middle. It was coarse filtered only and bottled in late December 2023. Six clones went into the blend, and just 190 dozen were made.

Fermenting on solids gives a flinty, savoury edge to grapefruit and white peach, with the malo showing as a creamy texture and the finish staying long and dry. Serve at 11 to 12 degrees. Excellent with roast chicken, scallops, or a mushroom and Gruyère tart.
