Empire of Dirt Birds of Paradise Rosé 2023

Empire of Dirt Birds of Paradise Rosé is a dry but fruity pink blend of Shiraz, Semillon and barrel-fermented Viognier.

All three parcels come off the Parklands vineyard in the Moorabool valley, with the Viognier worked in barrel for weight and the red fruit pressed early to keep the colour pale. Gravelly river country west of Geelong lends the savoury edge, and this site has been central to the label since Natasha Webster made her first wines in 2018.

Texture is the point here, refreshing but with something to chew on, red berry and stone fruit over a dry finish. Drink it properly cold at 7 to 9 degrees through summer, with grilled chicken, paella or a bowl of olives.
