Empire of Dirt EMERGE Traditional Sparkling 2020

Empire of Dirt EMERGE Traditional Sparkling is a dry, fine-beaded traditional-method sparkling from the Geelong region of Victoria.

The second fermentation happens in the bottle, the same approach used in Champagne. Grapes come from the country south-west of Melbourne, where Port Phillip Bay and Bass Strait temper the climate. It's a place of low rainfall, strong winds and a long history, first planted in the nineteenth century and replanted from the 1960s after phylloxera.

Fine bubbles and a crisp, dry finish. Well chilled at 6–8°C it's a lively aperitif, and it also works with oysters, fried snacks, charcuterie and soft cheeses.
