Empire of Dirt Ink Gamay 2025

Empire of Dirt Ink Gamay is a single-barrel red from the Moorabool Valley, dark in the glass and loose-limbed with spice.

Handpicked fruit is cold soaked, with about a quarter of it taken through carbonic maceration, before the whole lot settles into one old French hogshead. Fleshy dark berries arrive first, then crushed pepper and a fine savoury grip underneath. Twenty minutes in the fridge and a pour at about 15 degrees suits it best, with charcuterie, duck or a mushroom tart.
