Equipo Navazos I Think Manzanilla Saca March 375ml 2024

I Think is a manzanilla bottled en rama by Equipo Navazos from a selection of casks at La Guita in Sanlúcar de Barrameda.

Manzanilla is fino sherry raised in Sanlúcar, where the cooler, damper Atlantic air keeps the flor yeast alive year-round and gives the wine its particular saline lift. Equipo Navazos began as a project by Jesús Barquín and Eduardo Ojeda to seek out exceptional individual butts and bottle them as they were; this one comes from a sixty-cask selection at La Guita, the house where Ojeda long oversaw production as technical director of José Estévez. The wine spent around four and a half years under flor, longer than most manzanilla on the market, and was drawn straight from cask with only the lightest filtration, as was standard in Jerez before sterile filtration took over. That accounts for both its deeper gold colour and its texture. This bottling was drawn in March 2024.

Drink soon after opening and keep the bottle in the fridge. Serve at 6-8°C with olives, almonds, jamón ibérico or grilled prawns.
