Equipo Navazos La Bota 110 Manzanilla Pasada Capataz Cabo is the fifth saca from a fifteen-cask solera, drawn in February 2022.

Manzanilla is sherry raised in Sanlúcar de Barrameda, where humid Atlantic air sustains the flor year-round; a manzanilla pasada is one whose flor has begun to thin with age, letting a little oxidative character through. Equipo Navazos first bottled this solera in 2008 as its tenth La Bota release, followed by the Bota Punta two years later. Eduardo Ojeda has directed the selections since, while the fifteen casks themselves have been in the care of Capataz Cabo, one of Sanlúcar's great cellarmasters, now commemorated on the label. The average age of this release is around fourteen years. Most of the Palomino comes from the pago Miraflores, Sanlúcar's finest vineyard, and the butts were kept almost brim-full through maturation, so the oxidative note is subtle and the alcohol sits at about 16.5 per cent. The result is fine and powerful, with intense salinity and balanced freshness.

Serve at around 12°C in a proper wine glass, with rich fish dishes, charcuterie, scrambled eggs with porcini or a runny sheep's cheese.
